Vegan Carb Heaven

Since getting pregnant I haven’t cared too much about carbs…haha that was a joke. I never cared about carbs. Doesn’t red wine break down carbs for you? I’m pretty sure it’s basic science.

I came home from work the other day and piled up whatever I had left in the kitchen to try and figure out what I could make for dinner. It wasn’t much: potatoes, pasta, and tofu. Sound bland? It looked like an incredibly decadent feast was going to be made.

First I mixed:

  • 1 cup teriyaki sauce (not the thick kind)
  • 1 cup canola oil
  • 1 tbsp dried basil
  • Juice of 1/2 lime
  • Clove of 1 garlic
  • 2 tbsp agave nectar

I then sliced a brick of firm tofu really thinly (I’m not a fan of thick chunks of tofu, I don’t want to taste any bland middle parts!). I then put it in the oven at 400 for about 20 minutes while I made everything else.

Teriyaki Tofu

I boiled some plain linguine noodles at the same time as a couple of regular yellow potatoes to be mashed.

I finely chopped up a head of kale and an onion and heated it on a pan with some coconut oil. Once the onions were soft I added the noodles and fried everything for about 10 minutes. Once the noodles were browning a bit I took the tofu out of the oven and used the leftover juice in that pan to pour over my stir fry noodles.

For the presentation I made a circle in the middle of my noodles on my plate, piled the mashed potatoes, and topped with the marinated tofu.

I’m pretty sure Rich licked the plate. Welcome to carb heaven. (Eat with red wine and don’t even worry about the calories)

    WOW! It looks delish! I will have to try making the tofu that way and maybe sprinkling it with either black or toasted sesame seeds. I love the splash of green it really helps separate the noodles from the tofu a good idea since they are similar in color. What you think of adding some sun dried tomatoes…too much? I’ve got some tofu I need to use so this came just at the right time, thanks!l Keep ’em comin’.

  2. Yum! I love that idea! If you went with sun dried tomato I would take out the teriyaki as a base because I’m not sure how complimentary those two flavours are (I don’ know for sure though!). I’d probably replace with the teriyaki with white wine or even a really simple tomato garlic sauce. I’m sure you can play around to find a perfect combination.
