Maternity Leave Vegan Bucket List

It’s 2am and my baby is sleeping and I’ve found a routine and system to put her to sleep.  It gives me the urge to spin around the apartment like Maria in the Sound of Music. It also gives me time to plot my maternity leave wish list.

Unfortunately my cooking lately hasn’t been very inspiring (does cereal count as cooking?) but you know what has been inspiring? All the things I find on Pinterest during my many hours on the couch these days!

I found a bunch of mouth-watering recipes that look easy enough to create during my leave from work. Here are my top Pinterest finds that are on my mat-leave bucket list:
