It’s 2am and my baby is sleeping and I’ve found a routine and system to put her to sleep. It gives me the urge to spin around the apartment like Maria in the Sound of Music. It also gives me time to plot my maternity leave wish list.
Unfortunately my cooking lately hasn’t been very inspiring (does cereal count as cooking?) but you know what has been inspiring? All the things I find on Pinterest during my many hours on the couch these days!
I found a bunch of mouth-watering recipes that look easy enough to create during my leave from work. Here are my top Pinterest finds that are on my mat-leave bucket list:
(photos are sourced from the links where the recipes are)
Shirin Polow (Iranian Rice Pilaf)
This would be so easy to make vegan and perfect for demonstrating how worldly you are.
Get the recipe at Saveur Magazine’s website here.
Asian Noodle Salad
Ahhh! This looks so fresh and summery, I want to take it up to a patio right now. Get the recipe from ‘The Law Student’s Wife’ blog.
Easy Coconut Curry Over Quinoa
‘Easy’ is in the title, so I was pretty much sold there. Get all the details at the Minimalist Baker’s blog here.
Cauliflower Crust Calzone
Again this could easily be made vegan with some egg replacer and vegan cheese. Find the mouth watering dish at AskMeFood.
The Best Vegan Chocolate Mousse
Well if it’s the best I have to try it right? When I saw this I was reminded of that scene in Elf where buddy runs into the coffee shop to shout congratulations on having the ‘best cup of coffee in New York’. I Quit Sugar will show you how it’s done.
3 Ingredient Coconut Oil Biscuits
3 ingredients? Now you’re talking. Head over to Give Me Some Oven to find out how.
7 Ingredients Vegan Cheesecakes
These look diving, I don’t think the Minimalist Baker will let me down with these!
All of this has made me hungry, I’m going to microwave a frozen dinner right now!
