Sweet & Sour Orange Cupcakes

Whenever we go out of town, Rich and I ask our neighbor to watch our cat Angelina and I feel like we go away a lot. (If our neighbor is reading this then she’s nodding her head in agreement)

Most recently we had to go out of town for my sister’s bachlorette party and the whole family had to come because with an 8 week old, we have to travel in a pack.

My sister’s last party as a single girl was…well confidential but I think I’m allowed to share this one tame photo: (if there’s nothing there when you’re reading this then I was wrong and it’s been pulled down!)

Anyways, when we came back I wanted to do something more than the usual bottle of wine for our fantastic neighbor and decided I was ready to make some cupcakes after literally making hundreds of them for my recent fundraiser.

I wanted to try something new and was inspired by some marmalade I found in the fridge which is pretty sour and tangy. I ended up with a sweet orange cupcake with a marmalade surprise in the middle!

1 cup almond milk

Juice & zest of 1/2 an orange

1/3 cup canola oil

Mix separately:

1 & 1/3 cup flour

3/4 cup sugar

3/4 tsp of baking soda

1/2 tsp of baking powder

Dash of salt

Mix them both together and fill your cupcake cups 1/4 the way full. Then scoop about a tsp of marmalade in the centre of each cupcake before covering with more cupcake mixture so that the cups are half full.

Bake at 350 for about 15-20 minutes.


Beat 1/2 a bag of icing sugar with about 1/4 of a cup of almond milk and the juice & zest of the other half of the orange.

Top with orange zest and you’re set!

The result is a pretty sweet with a touch of tangy cupcake!
