It seems like pretty much everyone I know is having a baby or had one in the last couple of months and the majority of them are baby girls! It’s a pretty special time for me because it gives me an excuse to bake/cook for them and they really can’t say no. When else will your loved ones be so desperate for a fresh meal that they’ll eat whatever you give them no questions asked??
I have a couple friends who are gluten free so I basically put whatever I had in the kitchen in these muffins. They are gluten free but I’m pretty useless when it comes to GF cuisine, I basically just threw in a bunch of different GF flours and hoped for the best.
- 2 cups GF Flour (I used a mix of an all purpose GF Flour, Tapioca Flour, and Rice Flour)
- 1.25 cups of sugar
- 1/2 tsp of baking soda & baking powder
- 2 tsp nutmeg
The separately mix:
- 2 cups shredded carrots
- 1/2 cup apple sauce
- 3/4 cup melted coconut oil
Mix together and bake at 350.
You could definitely taste the three different flavours distinctly and you couldn’t really taste my melody of GF flours.
