Tofu Laksa

I wanted to call this post ‘White People Laksa’ because I made so many changes to the original recipe that it’s more ‘Laksa-inpired’ than actual Laksa. But I figured that might be offensive. So maybe ‘Laksa Fusion’? Isn’t that the PC way of calling something white-washed? Am I even allowed to say that? No matter, you will understand when you read the rest of this post.

I bought some rice noodles and was going to replace the hokkien noodles with spaghetti noodles but the rice noodles were more than we could eat alone so I cut them.

First I made those rice noodles by pouring some boiling water on them and letting them sit for 15 minutes.

While that was happening I brought two cans of coconut milk to a boil with 2 tablespoons of thai curry (I couldn’t find malaysian curry..see a theme of me making changes here?) and 1 reed of lemongrass chopped up. I then added 1 block of firm tofu to the mixture with the noodles.

Finally I mixed in 1/2 cup chopped mint and served of bean sprouts and sweat peas. So far from the traditional recipe but still pretty good!Vegan Laksa
