Pesto Lentil Stir Fry in Oven Baked Tomatoes

One of the most vivid memories from my sister’s wedding this year was my amazing and custom-made vegan dinner! (Besides losing some major tooth enamel while my daughter had a melt down during the vows…)

It was pretty simple but it was incredible, like I would do bad things to have it again. I figured it couldn’t be that hard to make so I set out to re-create the baked tomatoes with cooked veggies and pesto.

Let’s start out with the most simple part, the pesto. Just add these ingredients to your food processor:

  • spinach
  • garlic or garlic shoots
  • lemon juice
  • walnuts (or nut of your choice)
  • basil
  • salt
  • olive oil

Sorry I don’t measure so you’re going to have to play with it until you get the taste you want. It’s pretty hard to go wrong.

Next, heat up some olive oil on medium heat on a pan and add:

  • 1 chopped onion
  • garlic or garlic shoots
  • 1 yellow pepper
  • walnuts or nuts of your choice
  • salt
  • pre-soaked or cooked red lentils (they lost that colour by the end)

Then take 3/4 of the pesto you have and mix it into the stir fry, by now you should be taking tasters like every 2 minutes.

Then scoop out your tomatoes and add the mixture into the middle before baking in the oven at 350 for like 15-20 mins.

Then if you want to be all fancy simply serve the tomatoes drizzled in pesto. I was hungry and didn’t care so I did that but then served the rest of the stir fry on a bed of spinach with roasted potatoes that I was also making.

It was pretty spectacular, my mom even said it was one of the best meals of her life!
