This week has been absolutely insane in the most beautiful and terrifying way. It kicked off to a fantastic start with me receiving a fantastic job offer! It happened so quickly and it’s everything that I was looking for and more. I actually can’t wait to work! I don’t want to go into too many details since I’m still finishing the paper work and don’t want to jinx it but let’s just say I’ll basically be doing all of my shopping here from now on.
Then I spent a good 3 full days prepping for my sold out(!) Vegan Super at the Juice Truck. I made some last minute changes and was feeling good about the menu. I was also pumped to hang out with my sister and her friends (my friends too) who were helping me for the night.They ended up being life-savers when we had some food emergencies like when the pies fell apart or the top of the lasagna dried out.
You can find almost all of the recipes from the menu on my blog but I haven’t done the recipe for the truffle potatoes over gravy and cream since it was perfected really REALLY last minute. However because of popular demand I now have a recipe.
Whew what a week!
