Mint Roasted Pepper Pasta with Pistachios

My life exists almost exclusively in two rooms right now; my kitchen and wherever my laptop is (which is usually in the kitchen too). My bake sale has been keeping me busy early in the morning and during the night, plus I’m selling cookies at a craft fair this week, and Piquant Marketing is still my baby that needs constant attention and care. Thank god for red wine.

And for all our time in the kitchen our meals haven’t been very exciting because I’m pretty much making cupcakes and lasagna constantly.

I decided to try and mix it up with a quick and easy pasta recipe. Can you describe a meal as bright? It tasted bright, like Oprah was there screaming ‘YOU GET A CAR AND YOU GET A CAR!’. It had energy, it has pizazz, and did I mention it was so easy?

It was a perfect mid-week meal especially because that’s the day I usually phone-in making dinner with ‘leftover stir fry’ or plain chopped up tofu for Linden.

Now I just need to get through this week and I’ll meet you on the other side!
